Cheesemaking Workshop with an Artisan
What an incredible experience! We feel truly blessed to have taken this cheesemaking workshop with Elisa. She is a true gem and a wealth of knowledge. The hands-on portion of the workshop assisting Elisa in making fresh cheese with the milk collected from their cows that morning was fantastic. She shared her knowledge with every step of the process, including background and historical information about why something is done the way it is. Knowledge that has been passed down from generation-to-generation. We felt like a part of her family by the end. Elisa is passionate about sustainable living and a short supply chain. You can see their entire production cycle from farm to table during this workshop.
As our fresh cheese set, Elisa gave us a tour of her farm, including meeting the cows that provide her milk for her cheese and yogurt. Part of the tour also included being able to see their 13th century farmhouse. WOW! I am very interested in history and this was an extra special unexpected experience!
After we finished the farm tour we sat down for lunch with the cheese we made earlier, as well as the same cheese at different stages of aging. We also had saffron risotto she had made for us using their farm's Canaroli rice, fresh bread, wine, and great conversation.
We would highly recommend this cheesemaking workshop with Elisa and would love to do it again the next time we are in Milan.
